“Teach a man to fish, he eats for a day. Teach him to garden, and the whole neighbourhood gets a zucchini”

My veggie garden is in full swing, and this summer I planted zucchini for the first time. Based on the first few weeks of harvesting, it seems to be true what they say – every day I find 3 or 4 new full-sized zucchinis hiding under the leaves, ready to go! So, I’ve been on the hunt for new ways to cook zucchini. I recently found this Fudgy Zucchini Brownie recipe by The Big Man’s World … and these brownies are incredible!! Add a bit of vanilla ice cream and it’s the perfect dessert!
